• 200 g sugar
120 g melted butter
1 lemon zest
  • 3 medium eggs
150 g flour
80 g lemon juice (4 lemons)
½ teaspoon baking powder
25 g lemon juice
130 g icing sugar


  1. Mix melted butter with sugar. DO NOT BLANCH. Add in eggs, flour, baking powder and lemon juice.
Pour dough into a small buttered cake pan. Bake 30 to 40 minutes at 170°C. Cake should not rise too much and be lightly browned. Leave to cool at room temperature.
For icing, mix icing sugar with lemon juice and pour over the cake. Smooth with a knife or spatula to cover all sides and obtain a thin layer.
Put in oven on a grill for 8 minutes at 100°C to dry icing.
