Pour un goûter fin, parfaite accompagnée d'une tasse de thé.

Supplies

  • 35cl (12 fl. oz.) whipping cream
  • 1 tbsp. Earl Grey tea
  • 1 shortcrust pastry
  • 10cl (3.4 fl. oz.) milk
  • 2 tbsp. white sugar
  • 140g (5 oz.) dark chocolate
  • 1 pinch salt

Étapes

  1. Bring to a boil 10cl (3 fl. oz.) whipping cream along with the tea. Remove from fire and infuse for 3 minutes.
  2. Filter the cream and place in the refrigerator for 2 hours.
  3. Line the shortcrust pastry in a pie pan.
  4. Blind bake for 20 minutes at 170°C – 340°F.
  5. In the meantime, bring 10cl (3 fl. oz.) whipping cream, milk, sugar and salt to a boil.
  6. Pour the mix on the grated chocolate and blend in order to get a homogenous cream. Let cool at room temperature.
  7. With a mixer, beat the remaining 15cl (6 fl. oz.) and the cooled down tea flavored cream until firm. Both creams must be very cold.
  8. Incorporate to the chocolate.
  9. Fill the pie and place in the refrigerator for 6 hours.
  10. Garnish with crushed, ground pistachios.

  • 35cl de crème fleurette
  • 1 cuillère à soupe bombée de thé Earl Grey
  • 1 pâte sablée
  • 10cl de lait
  • 2 cuillères à soupe de sucre
  • 140g de chocolat noir
  • 1 pincée de sel

Étapes

  1. Porter à ébullition 10cl de crème avec le thé. Retirer du feu et laisser infuser 3 minutes.
  2. Filtrer la crème et mettre au froid 2 heures.
  3. Foncer un moule à tarte avec la pâte sablée.
  4. Cuire à blanc 20 minutes à 170°C.
  5. Pendant ce temps, porter à ébullition 10cl de crème, le lait, le sucre et le sel.
  6. Verser sur le chocolat râpé et mélanger pour obtenir une crème homogène et laisser refroidir à température ambiante.
  7. Monter les 15cl de crème restants mélangés à la crème au thé refroidie au batteur. Les 15cl de crème et les 10cl de crème au thé doivent être très froids.
  8. Mélanger au chocolat.
  9. Garnir la tarte et laisser prendre 6 heures au réfrigérateur.
  10. Décorer de pistaches concassées.
