Wash and thinly slice clementines with peel on and remove seeds. Make syrup by boiling 25 cl water with 200 g sugar and some cinnamon. Dip clementine slices into syrup and cook until translucent. For the dough, mix butter and sugar together. Stir in flour, yolks, turmeric and yeast. Work moderately until homogeneous. Let stand for 30 minutes in refrigerator then roll into a disc. In a pie plate, place clementine slices in the shape of a rose and cover with the dough disc.
Cook for 30 minutes at 180 ° C. Turn pie out and enjoy warm.
